Root Vegetable Salad, Veggie Patties, and Beetroot Dip

I love to use lots of bright colours when I cook. This was dinner a few weeks ago (photo credit to @datascience). The veggie patties and beetroot dip are store bought but we often try and make our own when we have the time. The salad has carrot, sweet potato, squash, pumpkin, green leaves, and a light dressing.
