Lamb Vindaloo - a spicy lamb dish that has at curried tomato based sauce. Great served with Basmati rice and Naan bread.
Ingredients:
2 - 3 lbs of Lamb Cubes
6-8 cloves of Garlic
2 Onions
2 Potatoes
1 15 Oz. Can Diced Tomatoes
2 Tbs Ginger Paste
Splash of White Wine Vinegar (can substitute other type of vinegar)
2 Tbs Olive Oil
2 Tbs Ghee (can substitute Butter)
1 1/2 Tbs Cumin Seeds
1 1/2 Tbs Mustard Seeds
1 1/2 Tbs Ground Coriander Seeds
3-4 Bay Leaves
1 Tbs Cashmere Pepper Powder (can substitute Cheyenne)
1 Tbs Paprika
1 Tbs Turmeric
1 Cinnamon Stick
Salt & Pepper
Garnish with Cilantro
