Banga Soup, also known as Palm Kernel Soup or Ofe Akwu in Eastern part of Nigeria or Egboyin the Western part of Nigeria, is a wonderful Nigerian dish with a nutty flavor. You'll be licking your fingers after eating this delicious soup!
There are several ways to prepare banga soup, but I prefer the delta way, which is what I grew up eating whenever I visit a friend from the east.
Banga soup is prepared using the oil extracted from palm fruit ; for more details, see my post on palm kernel oil extraction.
The palm nut (also known as palm kernel) is the fruit of the oil palm tree, which can be found in West and Central Africa as well as Asia. It gives this soup a deliciously nutty and ethnic flavor!
The traditional method of cooking Nigerian Banga soup is stressful and time consuming. I used to wait impatiently while my friend made Banga soup because it seemed to take forever, so I bought the ingredients and tried it on my own.. the first trial was complete nonsense, as I made a mistake extracting the palm kernel oil and the soup was messed up, but with time and practice, I learned how to extract the oil and make the soup perfectly, and I even improved by using catfish to make the soup.

Ingredients
Palm Kernel Oil (extracted from the palm fruit)
Catfish
Banga Stick
Uyayka
Red Pepper, Tomatoes and Onions (Blended)
Banga Spice
Crayfish
Periwinkles
Beletete Leaves (mandatory)
Salt and Maggi.
Step 1: In a very clean pot boil the palm kernel oil for 15 minutes before adding the Banga Stick and Uyayka then allow to boil for another 15 minutes.
Step 2: Now add the blended pepper (red pepper, tomatoes and onions) to the soup and the Banga spice then stir very well and allow to cook for 10 minutes.
Step 3: Add the crayfish powder, then salt and maggi and stir thoroughly.
Step 4: Wash and prepare your catfish, add the catfish to the soup and cook for 15 minutes this is to allow the catfish to cook very well. Finally add the periwinkles and allow to cook for 5 minutes..
Step 5: Finally add the Beletete leaves and cook for 10 minutes, turn off the heat and serve.. the palm kernel oil extracted was much and the pot I used was small that's why soup was full (I didn't bother covering the pot so it won't pour away)
Banga soup goes well with any kind of swallow, but since it's an Eastern dish it's best recommend to serve with an Eastern swallow.. and the swallow that best suit this is Yellow Eba (Garri Igbo).. this combo is actually lit, if you follow the above steps you will definitely enjoy the soup and ask for more.. don't forget to share with your neighbors 😁
