Grandpa recipe - risotto with sausage and tomato sauce

Sometimes you really don’t know what to cook, sometimes you don’t have time for a long preparation. On these days I follow the recipe of my grandpa. He was cooking very rarely, but when he did it was pasta or risotto with sausages. I don’t know why, because it is a memory from my childhood or because it was really so good, this still is my favourite dish.

Simply and quick preparation that doesn’t have exact measurements, everyone can adapt it as he wishes.

In my case I’ve did 3 smaller portions:

  • 150g rice
  • 250 g tomato sauce
  • 1 onion
  • olive oil
  • 2 fresh sausages
  • Parmesan cheese
  • nutmeg
  • salt and pepper

Chop the onion in small pieces and fried it on a little bit of olive oil until it becomes light yellow. Peel the skin off the sausage and use only the meat (cut it or tear in small pieces) and add it to the onion.

Fry all together for 15 minutes (if needed add a little bit of water). My grandpa added a sip of brandy and left to evaporate the alcohol (I skipped this part).

Add the rice and fry all for a minute, stir all the time.

Then add the tomatoes,.....

water, salt,.....

and grated nutmeg.

Cook for another 20 minutes (depends of the rice type you will use, but be sure to use a rice for risotto).

When is cooked remove from the fire, and add the grated Parmesan cheese). Leave the risotto for 1-2 minute to rest and give the parmesan the time to do its magic.

Serve on a plate and add some red pepper on top.
