Artichokes are one of those vegetables that I always look at with respect at the grocery store. I love how they taste, but often I don't decide to buy them just because I'm afraid that their preparation will take a long time. I think that cleaning them up takes quite a long time, but probably is just an impression. To get to their tasty core, you have to remove a lot of the outer leaves and the prickly core.
Just by coincidence I crossed the below recipe and I found it as a very tasty side dish that I have to try. So last time I was not just admiring the artichokes, but I also bought them and started the preparation.
For artichokes and potatoes:
- 4 artichokes
- 500 g potatoes
- 60 g olive oil
- salt to taste
- black pepper to taste
- 30 g breadcrumbs
- parsley to taste (I skipped it)
- 1 bio lemon
- Parmesan cheese
- mint to taste
For the fish:
- 3 filetes of codfish
- olive oil
- salt
Sauce:
- 3 tablespoons butter
- juice of half an organic lemon
- lemon zest of half an organic lemon
- half a cup of cream
- salt
- pepper
To prepare this recipe we first need to clean the potatoes and artichokes. Start cleaning the artichokes by removing the outer leaves and cutting off the top and the end. Peel all the outer leaves to get a more tender core. Cut the artichokes in half and clean the inner part, then cut into wedges. Then put them in a bowl in which you have poured cold water and squeezed in the juice of half a lemon so that they don't blacken (oxidise).
Peel the potatoes, wash them and cut them in half, and then each half into 4 wedges.
Put them in a saucepan, add cold water, salt and bring to a boil.
When the water starts boiling, add the artichokes and acidulate it with a squeeze of lemon. Blanch them together with potatoes for 5 minutes.
After 5 minutes and drain everything.
Wash and chop the parsley and mint. In a bowl mix breadcrumbs, mint, parsley, lemon zest, salt and pepper.
Pour the artichokes and potatoes into a greased tray. Distribute them evenly and add some olive oil on top. Cover with mixture of breadcrumbs and drizzle with olive oil.
Put some grated Parmesan cheese on top of it 😜
I just love cod fish. It is tasty, meaty, almost boneless and easy to prepare. This time, I have prepared it by simply salting it, then pouring a little olive oil over it. I put it in a baking tray and it was ready to bake.
Bake both at 180 degrees Celsius in a the oven for about 25 minutes. Then additional 3-5 minutes of grill to brown to taste.
While baking was in progress, I quickly made a cream sauce with lemon for the cod. Melt the butter in a heavy-bottomed pan. Add the grated lemon zest and stir. Add the cream and stir. Simmer for one minute. Finally, add the lemon juice and stir. Finally, season with salt and pepper to taste.
The tasty dish is prepared, it is a perfect combination of different flavours that combine beautifully to create a fantastic culinary experience.
