Time flies, we're already halfway through the year. Let's be happy, it goes by so fast.
Food is part of the health and well-being of every human being. With so many changes we've been experiencing for some years now, food is one of those changes that we're constantly adapting to, seeking out foods that nourish our organs and keep us healthy.
Sometimes, we only have a few ingredients available for various reasons. That's when we have to get creative and draw on the biblical story of the multiplication of the loaves and fishes.
This salad is very simple, with few ingredients—enough for two people. The important thing is the nutrients we consume, and it's also visually appealing with its vibrant colors.
The following ingredients were used for this salad:
Wash and dice the potato (preferably). Boil the diced potato until tender.
While the potato is boiling, dice the carrot.
Dash the tomato and dice it as desired.
Fresh oregano, finely chopped (if you have parsley or cilantro, you can also use that; in this case, fresh oregano was used because that's what was available).
The carrot is also boiled (I like it al dente, but cook it to your liking).
In a bowl, combine all the ingredients, season with lemon juice and salt.
Ready to accompany your chosen meal.
Enjoy!
