Hey everyone

Today’s ice coffee is a dark roast for a cloudy weather but a lot of humidity in the air, now not many people agree of drinking a dark roast coffee, but I do prefer it in ice coffee especially flavored ice coffee , for instance I had roasted hazelnut syrup, medium roast have a lot of flavor at times . Some chocolate and some fruity where as dark roast is a bit more bitter, when it come to that I like to have a bit of coffee biter taste and add my flavor , where as if I was not adding any flavor I would just use a simple African medium roast due to the fact that it will provide all the flavored goodies ..

Dark Roast Coffee

The dark roast coffee I use is a blend of 5 different Arabica beans , so when drank in a cappuccino it’s not just straight horrible bitter , but a smooth taste and slight bitter taste to it , great for coffee drinkers that just search for a coffee taste. Especially in a americano , it does not give of a harsh burnt caramel taste that will linger on your tongue but a smooth beautiful yet slight bitter flavor. For a cappuccino and using the dark roast the amount of grams I use for it is 18 grams of ground espresso coffee and 36 grams out as an espresso shot. One thing I’ve learn though is, Dark roast beans are easy to extract out as an espresso shot as you don’t have to work so hard to get a good extract. Grinding and grind size of a dark roast bean does need to be at a bit more of a finer grind, Where as with a medium roast your grind size may be need to be a bit more less fine. That is what I’ve seen that works for me.

Chocolate Chip Biscuits

The biscuits are home made , with chocolate chips and Cadbury chocolate as well , the batter is phenomenal, yet difficult to make . I have never seen baking so technical, with the biscuits the batter has to be made in a distinctive order with the correct mixture ... which includes the temperature of the butter when added and as well as the pre-heating of the oven ... as difficult as they are to make , the outcome of them is delicious. They are a really good seller of mine at the shop.

Giving Out Goodies

Now on Tuesday which was yesterday is pensioners day , where we give out cakes and coffees for free , we offer them a variety which even includes Mochas, which are my favorite to make and drink. I do get busy on those days as a lot of pensioners love freebies which is a shock to them when we say it’s free for them , it’s nice to see a smile on their face and them having a nice social gathering. A lot of them are cooped up at home because of lockdown so getting them out on a Tuesday helps a lot with their mental health and keeps them active .. we do practice safety and social distancing as a lot of the pensioner have made the coffee shop their home and would devastate us to here them in a bad situation.

Recipes

Having many ingredients in shop allows me to explore different tastes and flavors, and one recipe i have found and explored is a rooibos tea and strawberry puree milkshake. I am not sure if many people know about rooibos tea, but it is a herbal tea here in South Africa. Rooibos tea normally come is tea bags and is sold in many of the stores here, it is a South African customary tea to have in a house hold and very well known.

Now you can not use the teabag to get a good extract so that is why one of my suppliers created a rooibos tea espresso inner basket for a portafilter, to pore out the tea extract like an espresso coffee. Yes an espresso tea , and it can be used for ice teas and as well milkshakes.

The strawberry and rooibos tea milk shake is a great tasting drink that consists of vanilla ice cream and ice for good texture. I would advise on using strawberry puree as it gives off the beautiful sweet strawberry flavor with its strawberry bits. It is very simple to make. Ill be releasing this drink sometime in December on menu.

Thanks for reading my coffee blog everyone and i hope you try out the rooibos tea and strawberry milkshake. Stay safe and well and be sure to add your perspective i always do enjoy everyone input.
