Ingredients

🍠 4 medium-sized sweet potatoes

🌿 1 tsp Cinnamon

🫒 1 tbsp Olive oil
🧅 1 medium onion, diced
🦬 2 lb 90% lean ground bison
🌮 2 tbsp SpiceX Seasoning Taco BLAST
🍅 2 tbsp Tomato paste
🧄 8 garlic cloves, minced
💧 1/2 cup Water
🍯 1 tsp Mike's Hot Honey
🧂 1 tsp Salt
🌶️ 1 tsp Pepper

🧀 1 cup Freshly grated Monterrey Jack cheese

🥑 2 large Avocados
🧅 1/2 medium Red onion, diced
🍅 2 Tomatoes, diced
🌶️ 1 Serrano, diced
🌿 1/4 cup Cilantro, chopped
🍋 1 Lime


Instructions

1- Prepare the Sweet Potatoes:

  • Preheat your oven to 350°F (175°C).
  • Pierce each sweet potato several times with a fork.
  • In a microwave-safe bowl, combine 3 tbsp butter, 2 tbsp brown sugar, and 1 tsp cinnamon. Microwave until melted and well-mixed.
  • Brush the mixture evenly over each sweet potato, ensuring they are well-coated.
  • Place the glazed sweet potatoes into oven-safe meal prep containers.
  • Bake for 1 hour, or until the sweet potatoes are tender.

2- Prepare the Taco Beef:

  • Heat 1 tbsp olive oil in a frying pan over low heat.
  • Add diced onion and sauté for 2-3 minutes until soft and translucent.
  • Add ground bison, seasoning with salt and pepper. Cook while breaking up the meat.
