The Huevos Sucios is a favourite of ours... Although, being simple folk, we prefer the other name, DIRTY EGGS
It is a no BS concoction of all the good stuff, eggs, avocado and tomatillio salsa, jalapeños, black beans, some fancy sauce, I added chorizo and you should too. Oh they even chucked in TATER TOTS, they taste awesome, no we are not 10 year olds.
This thing is ready for all moods, on this occasion we were hung over and trekked it from Mt Martha @ 2 pm! But have had many sober moments over this dish... Archie's can give us their diiiirty eggs all day!!
