[ESP-ENG]Deliciosa Salsa Napolitana / Delicious Neapolitan Sauce
4 tomates bien maduros
3 cebollas pequeñas ó 2 cebollas medianas
Dos dientes de ajo
2 cucharadas de aceite de oliva
Albahaca molida (si tienes albahaca fresca mucho mejor)

Hello friends of Foodies Bee Hive! It's my first time here in this community, and today I would like to share with you a recipe for Neapolitan sauce that is super easy to make and takes very little time, at most 25 minutes. I learned to prepare this sauce quite some time ago in a cooking workshop, you can prepare it every two weeks and keep it in the fridge to add it to any preparation; I will also give you some ideas of recipes that you can make with this delicious sauce.
For its preparation we will need
4 ripe tomatoes
3 small onions or 2 medium onions
Two cloves of garlic
2 tablespoons of olive oil
Ground basil (if you have fresh basil much better)
1 teaspoon of salt
Pepper to taste
We are going to wash our tomatoes and chop them with the onions, put the oil and fry the two cloves of garlic and add the chopped tomatoes and onions (see image).
Cook over medium heat for 5 minutes, stirring with a spoon and letting the onions cook and the tomatoes begin to release their juices (see images).
Once the 5 minutes have elapsed we are going to add ground basil (if you have fresh basil, wash it, chop it and add it to the preparation), add a pinch of salt and continue stirring and letting the tomatoes and onion cook well, for another 5 minutes (see image). if the sauce dries out a little you can add ¼ cup of water.
In 10 minutes, you will see how it is taking consistency of a rustic tomato sauce, this rustic sauce can be put on toasted bread with a little parmesan cheese and you have a delicious toast. In my case, I am going to use it to store it and have it in the fridge for other preparations. So, I took it off the heat and put it in the blender (see image).
Once blended I put it in the same pan, cooked it for another 5 minutes, added another pinch of salt and pepper, and our sauce is ready! I let it cool and put it in two containers with lids, I keep this sauce in the fridge and I can use it later as a pasta sauce, I can add meat and make a bolognese sauce for pasta or lasagna/pasticho. Also, we can use it to prepare pizza, or to prepare a delicious meat and potatoes.
In the image below, I used it for a pasticho that I left ready to bake the next day. The good thing is that you can make it, have it reserved and thus save time when cooking.
Let me know if you have any other recipe, with which we can use this delicious sauce.
