My first favourite is Rocket - Once planted, it will self seed and come up every year.
As an addition to salads, it is also wonderful with a cheese sandwich and what's more the flowers and seeds can be eaten too.
I love it any way, but my best is to have it with sliced tomatoes, feta cheese and olive oil as a side salad - so simple and yet very delicious.
Rocket is easy to grow and not fussy about soil. however, it grows best in the cooler months as too hot weather is inclined to make it bolt and go to seed.
My other favourite is Corriander or Cilantro.
The plant is mostly known as cilantro and the seeds as corriander.
I love to cut plenty to serve as a topping for all curries, but it is just as nice in salads,soups etc., -some people find the flavour too strong, but, for the most part it is enjoyed by all.
This is also a cool weather crop and if you cut it on a regular basis, it will keep producing more leaves to harvest.
When planting from seed, gently rub the seeds together in your hand in order to crack the outer casing of the seeds as this will allow them to germinate quicker when planted.
Always plant plenty as one can never have enough of it.
