It has been a quiet weekend. My wife is under the weather and I just stayed inside the house and helped her get through the day. Still did a bit of gardening with my indoor plants and vacuumed the carpets too.
This is the latik, a by product when making coconut oil. I remember my grandmother producing this when I was young. She puts grated coconut into a deep frying pan over a low heat fire until the coconut releases its oil. The remaining solids becomes latik. Some people might just throw it away (since they are only after coconut oil) but in our house, it is kept and used as garnishing in other Filipino dessert dishes like suman.
