Jollof rice is a popular West African dish that is typically made with rice, tomatoes, onions, peppers, and a variety of spices. Here's a basic recipe for making jollof rice:

Ingredients:

  • 2 cups of long-grain white rice
  • 2-3 ripe tomatoes, chopped
  • 1 large onion, chopped
  • 1-2 scotch bonnet peppers or habanero peppers, chopped (use more or less depending on your spice preference)
  • 2-3 cloves of garlic, minced
  • 2 tablespoons of tomato paste
  • 2 teaspoons of smoked paprika
  • 1 teaspoon of dried thyme
  • 1 teaspoon of curry powder
  • 1 teaspoon of salt (or to taste)
  • 3 cups of water or chicken stock
  • 2 tablespoons of vegetable oil

Instructions:

  1. Rinse the rice in cold water until the water runs clear, then set it aside to drain.
  2. In a large pot, heat the vegetable oil over medium-high heat.
  3. Add the chopped onions and sauté for a few minutes until they soften and become translucent.
  4. Add the chopped tomatoes, scotch bonnet peppers, and garlic to the pot, and stir everything together.
  5. Cook the vegetables for about 5-7 minutes, or until they have softened and released their juices.
  6. Add the tomato paste, smoked paprika, thyme, curry powder, and salt to the pot, and stir everything together.
  7. Add the rice to the pot, and stir it into the tomato mixture until it is well coated.
  8. Add the water or chicken stock to the pot, and stir everything together.
  9. Cover the pot with a tight-fitting lid, and reduce the heat to low.
  10. Let the rice simmer for about 20-25 minutes, or until all the liquid has been absorbed and the rice is tender.
  11. Once the rice is cooked, fluff it with a fork, and serve hot.

You can also add other ingredients like chicken, beef, or vegetables to the jollof rice for extra flavor and nutrition. Enjoy!
