Hola, un placer saludarles y traerles una nueva, sabrosa y sencilla receta...
Estamos en plena temporada de mangos y en la comunidad en la que estoy viviendo las matas de mango abundan, es muy común ver en los patios de las casas 1, 2 y hasta 3 matas de mangos.
Esta fruta tiene sus variedades, hay mangos grandes, pequeños, dulces, ácidos, Las denominadas mangas, ingertados, amarillos rojizos y sabores, pues, varían de lo cítrico a dulces y súper dulces. Jejeje.

Hoy les traigo esta receta, sencilla y fácil como todas, decidí compartirla con ustedes, puesto que, no en todas las regiones de Venezuela se hace esta preparación, de hecho donde es más frecuente es en el Estado Bolívar y le dan el nombre de Carato, que dicho sea de paso, en el Estado Lara, el Carato es Chicha elaborada con maíz tierno (forma parte de nuestra cocina aborigen) eso es nada más y nada menos que la Diversidad Cultural de nuestro país.
Aquí vamos pues!!! Cómo siempre, manos a la cocina...

Hello, a pleasure to greet you and bring you a new, tasty and simple recipe....
We are in the middle of mango season and in the community where I am living, mango trees abound, it is very common to see 1, 2 and even 3 mango trees in the backyards of the houses.
This fruit has its varieties, there are big mangos, small, sweet, sour, the so-called mangas, ingertados, reddish yellow and flavors, well, vary from citrus to sweet and super sweet. Hehehe.

Today I bring you this recipe, simple and easy as all, I decided to share it with you, since, not in all regions of Venezuela this preparation is made, in fact where it is more common is in the State of Bolivar and they give it the name of Carato, which incidentally, in the State of Lara, the Carato is Chicha made with tender corn (part of our aboriginal cuisine) that is nothing more and nothing less than the Cultural Diversity of our country.
So here we go! As always, hands to the kitchen....

Ingredientes:
20 mangos verdes.
1 Kg de azúcar.

Ingredients:
20 green mangoes.
1 Kg of sugar.

Procedimiento:
Paso 01. En una olla colocamos los mangos con agua suficiente para cubrirlos. Cocinamos por aproximadamente 30 minutos y dejamos enfriar.

Procedure
Step 01. Place the mangoes in a pot with enough water to cover them. Cook for approximately 30 minutes and let cool.

Paso 02. Retiramos la concha y despulpamos con la ayuda de una cuchara.

Step 02. Remove the shell and pulp with the help of a spoon.

Paso 03. Para licuar:
El procedimiento a continuación será al "ojo por ciento" debido a que dependiendo del tipo de mango la pulpa será más o menos jugosa, también depende del tamaño, en nuestro caso para licuar los 20 mangos usamos 1 1/2 lt de agua.

Step 03. To blend:
The procedure below will be to the "eye percent" because depending on the type of mango the pulp will be more or less juicy, also depends on the size, in our case to liquefy the 20 mangoes we used 1 1/2 lt of water.

Paso 04. Una vez licuada la pulpa procedemos a colar, reservando la fibra.

Paso 05. Procedemos a endulzar nuestro Carato, al igual que en el paso 3, será al "ojo por ciento" en nuestro caso usamos 600gr de azúcar refinada. Lo recomendable es probar la mezcla e ir agregando el azúcar para que el resultado sea al gusto de quien lo prepara. Llevamos a la nevera para tomar bien frío o agregamos hielo para servir.

Step 05. We proceed to sweeten our Carato, as in step 3, it will be to the "eye percent" in our case we use 600gr of refined sugar. It is advisable to taste the mixture and add the sugar so that the result is to the taste of the person who prepares it. We take it to the refrigerator to drink it very cold or add ice to serve.

Pasta de Mango.
La pasta es una especie de bocadillo y la prepararemos con la fibra que nos quedó al colar la pulpa.

En un caldero colocamos la fibra y agregamos 400gr de azúcar, cocinamos a fuego lento removiendo constantemente hasta que se deshidrate la mezcla.
Toma aproximadamente 10 minutos.
Una vez que observamos que la mezcla se despega de la olla retiramos del fuego y servimos.
Más fácil imposible...
Aprovechemos la temporada de mangos, son super nutritivos y deliciosos.

Mango Paste.
The paste is a kind of snack and we will prepare it with the fiber that was left after straining the pulp.

In a cauldron we place the fiber and add 400gr of sugar, cook over low heat stirring constantly until the mixture dehydrates.
It takes approximately 10 minutes.
Once we observe that the mixture comes off the pot, remove from the heat and serve.
It couldn't be easier...
Let's take advantage of the mango season, they are super nutritious and delicious.

Notas Nutricionales:

El mango es una fruta con un gran poder antioxidante, ya que posee cantidades significativas de los 3 nutrientes antirradicales libres más importantes: vitaminas C y E y betacaroteno.

  1. FUENTE DE VITAMINAS C Y A
    Una sola pieza de 200 g aporta la cantidad diaria recomendada de vitamina C (unos 60 mg) y el 60% de la vitamina A, en forma de betacaroteno. El mango es una de las fuentes más importantes de este nutriente.

  2. RICA EN VITAMINA E
    Aunque la vitamina E, uno de los antioxidantes y protectores cardiacos más eficaces, suele encontrarse principalmente en los alimentos grasos, el mango posee una cantidad extraordinaria tratándose de una fruta. Una pieza de 200 g aporta 2,3 g, es decir, el 23 % por ciento de la cantidad diaria recomendada.

  3. APORTA MAGNESIO Y POTASIO
    En cuanto a su contenido mineral, destacan las proporciones de magnesio y potasio (en ambos casos, un mango proporciona el 10% de las necesidades diarias).

  4. CONTIENE ÁCIDOS DEPURATIVOS
    Además de nutrientes, el mango aporta otras sustancias con efectos beneficiosos sobre la salud. Los ácidos tartárico y málico ayudan a contrarrestar el efecto de los residuos metabólicos de naturaleza ácida.

¿Cuáles son los beneficios del mango?
La peculiar composición del mango previene las enfermedades degenerativas, especialmente los trastornos cardiacos, el cáncer y la diabetes (es rico en hidratos de carbono, pero no aporta tantas calorías como su sabor dulce puede hacer pensar: 100 g contienen solo 65 calorías con una buena dosis de fibra).

  3. Alcaliniza y Fluidifica la sangre.
  4. Favorece la asimilación de nutrientes.
