CHOP SUEY is a stir-fried mixed vegetables; like cabbage, carrot, chayote, string beans, celery, meat and seafood.

Chinese American invented the dish based on " tsap seui", a cantonese dish that means " miscellaneous leftover". Theres a story behind its origin.

In my cooking version I omitted meat instead I use tokwa or tofu.
Tofu is also rich in protein same as we get from eating meat.

PROTEIN plays an important part of a healthy diet.
*It helps repair cells and make new one.
*It protects the body from viruses and bacteria.
*It transport molecules throughout the body.

HOW I DID THE PREPARATION?

First I soaked the vegetables in water and baking soda for 20 minutes , then I rinse it with plain water in removing pesticides. I learned it from olivia08@olivia08 blogged.

I GATHERED THE INGREDIENTS:

1 onion sliced
3 cloves garlic minced
Mixed vegetables cut
4 tofu or tokwa sliced
1 teaspoon fish sauce
1/2 chicken cube
Cornstarch slurry (1 teaspoon of
soy sauce, 1 small sachet of oyster sauce, and 1 teaspoon of cornstarch)
1/2 cup of water
2 tablespoon of vegetable oil.

HOW I COOK?

  • In a pan, pour oil and fry the tokwa set aside.

  • In the remaining oil, saute garlic and onion, add the fish sauce and the chicken cube, pour water

and add the mixed vegetables. Cover the pan let it simmer for 2 minutes

then add the tofu or tokwa.

*Cover the pan again, let it simmer for 2 minutes, when vegetables are almost cooked,

make a hole at the center then pour the cornstarch slurry, stir and its done.
