Мої правила випікання пасок/My rules for baking Easter cakes (UA/EN)
Привіт. Сьогодні я печу паски. Можливо хтось скаже, що ще дуже рано і вони можуть зачерствіти до неділі, але я слідую бабусиним правилам.
Правило перше – паски треба пекти або в четвер, або в суботу.
В п’ятницю не можна, бо вона страсна, іншими словами траурна. Цього дня, за православним віруванням, розіп’яли Ісуса Хреста. А в суботу і так багато справ, а випікання займає що найменше пів дня. А ще присутнє хвилювання – бува не вдадуться. Тоді що? От і печу у четвер.
Правило друге – не можна приступати до роботи з тістом у поганому настрої і з недобрими думками.
Паски люблять спокій і добрий гумор. Не знаю звідкіля взявся цей “забобон”, але він дійсно працює. Перевірено на собі. Варто лиш розсердитися чогось, і все – тісто не підіймається.
Правило третє – ніяких протягів і гучних звуків.
Ще в дитинстві таїнство випікання пасок, супроводжувалося попередньою нотацією для мене, щоб лишній раз на кухні не вешталася і не гримала дверима. Тому цього дня мені було краще в кухню не заходити без потреби. От і я дотримуюся цих вимог, а мої домочадці знають, що краще почекати де-інде, поки паски не сядуть в духовку.
Взагалі, у мене все по спрощеній системі, не так як бачила все у дитинстві. Моя бабуся розпочинала з опари. Не знаю точно як вона її готувала, але це був довгий процес, тому готувалася вона ще поночі. Ще бабуся у виготовленні здоби не визнавала залізних інструментів (ложки, міксери і таке інше). Вона замішувала дерев’яною кописткою, а борошно в опарі розминала дерев’яним млинком (держак, на якому хрест на хрест вбудовані пластинки). Бабуся говорила, що тісто любить руки, тому виминати треба доти, поки воно не стане відлипати від діжі.
Паски і пироги старенька пекла лише у печі. В батьківській літній кухні є справжня піч, правда нею вже давно ніхто не користувався. Це ж ціла наука! Потрібно накласти дрова у такій кількості, щоб перегорівши, побіліло “піднебіння” (верхня заокруглена частина в середині) печі. Потім необхідно було вигребли жар і поставити вже сформовані паски, які повинні до цього часу були піднятися у формах. Користувалася бабуся рогачем – спеціальним інструментом для печі. Потім вона совала їх через деякий час, щоб рівномірно пропеклися. А визначала зрілість виробів старенька таким способом: витягувала з форми паску, клала її на долоню, при цьому рука витягнута, і била себе по передпліччю кулаком, ближче до ліктя. Якщо від таких маніпуляцій паска підскакувала на долоні, то випічка вже готова.
А ще моя бабуся завжди прикрашала паски шишками і хрестами. Кріпила ці прикраси до “тіла” паски свяченою вербовою гілочкою. Таким чином, ще до освячення в церкві, вироби проходили, таки би мовити, перше хрещення.
Всі описані ритуали я пам’ятаю з дитинства. Ці спогади, окутують мене теплом і ностальгічним щемом. Із задоволенням розповідаю про сімейні звичаї і традиції своїй дитині, адже це культура та історія нашого народу.

Friday is not possible because it is passionate, in other words mournful. On this day, according to Orthodox belief, Jesus was crucified. And on Saturday there are so many things to do, and baking takes at least half a day. And there is excitement - sometimes they will not succeed. Then what? So I bake on Thursday.
The second rule - you can not start working with the dough in a bad mood and with bad thoughts.
Easter cakes love peace and good humor. I don't know where this "superstition" came from, but it really works. Tested on myself. You just have to be angry about something, and all - the dough does not rise.
Rule number three - no drafts and loud noises.
Even as a child, the sacrament of baking Easter cakes was accompanied by a preliminary notation for me, so that once again in the kitchen did not wander and did not slam the door. So that day it was better for me not to go into the kitchen unnecessarily. So I follow these requirements, and my family knows that it is better to wait somewhere until the Easter cakes sit in the oven.
In general, I have a simplified system, not as I saw everything as a child. My grandmother started with steam. I don't know exactly how she cooked it, but it was a long process, so she prepared it at night. Even my grandmother did not recognize iron tools (spoons, mixers, etc.) in the manufacture of muffins. She kneaded with a wooden skewer, and kneaded the flour in the dough with a wooden grinder (a handle on which plates are built crosswise).Grandma said that the dough loves her hands, so it should be avoided until it starts to stick out of the bowl.
The old woman baked Easter cakes and pies only in the oven. There is a real stove in my parents' summer kitchen, though no one has used it for a long time. This is a whole science! It is necessary to put firewood in such quantity that having burned out, the "palate" (the top rounded part in the middle) has turned white. Then it was necessary to rake the heat and put the already formed belts, which should still have risen in shape. My grandmother used a stag - a special tool for the oven. Then she poked them after a while to bake evenly. And the old woman determined the maturity of the products in the following way: she took the belt out of the mold, put it on her palm, with her hand outstretched, and beat herself on the forearm with her fist, closer to the elbow. If from such manipulations the Easter cake jumped on a palm, then pastries are ready.
And my grandmother always decorated Easter cakes with cones and crosses. She fastened these ornaments to the "body" of the Easter cake with a sacred willow branch. Thus, even before the consecration in the church, the products were, so to speak, the first baptism.
I remember all the described rituals from my childhood. These memories envelop me with warmth and nostalgia. I am happy to tell my child about family customs and traditions, because this is the culture and history of our people.
