Four years ago Laura and David started a restaurant called La Rancha Parrilla, in a small place in Manizales. Better known as "The City of Open Doors". David is from Manizales, Laura from Bogota and somehow La Rancha Parrilla was born in the capital of Colombia. Some years ago they met there, fell in love, and then both traveled the continent working and learning about cooking. When they returned they moved to Manizales, and soon after they founded the restaurant we are celebrating today.

It started with a 4-burner stove, at the beginning food was made for only a few customers. The menu was different, but the style has been maintained as well as the quality. That's what has kept them going, always putting the best on the table.

But to refer to La Rancha only in numbers is empty, trivial, and even superficial. The passion is incredible, Lau and David are on their feet from very early in the morning to buy supplies for the restaurant. Even if they are exhausted they do it, success is built with effort and discipline. I think there are no better ingredients in the restaurant than those. Then comes the human value of them, they are people of values and I respect that.

And that is precisely what I highlight about La Rancha, it is like a family that helps each other without hesitation and that is a super added value. I have been able to see firsthand the humanism in the roots of an enterprise that has Manizales in love, seeing them reach out to their employees and acquaintances makes you appreciate them more.

I have heard stories of their beginnings, of how they have managed to grow and advance even in difficult times. But I am struck by the fact that many of their employees return and that tells me that there is even more value, one that few get to see. No one returns where they have been treated badly.

They have customers that follow them from day #1 and that is a very complex thing to happen in this business, gastronomy is an art, and keeping people in love is difficult. Imagine always eating in one place for 4 years, just think about it. What are the chances that you, my friend reader, will do it? Will you?

One of the phrases I hear the most is "We take as long doing it right as doing it wrong, so let's do it right" and it is certainly a good truth. The best example is that for 4 years they have been doing it right, with flaws like everything else but beyond that. They still want to always give their best, in soccer jargon we would say "they put on the 10".

Everyone puts their shirt on, everyone gives their maximum effort so that each dish is the best for the client, from the waiter to those who prepare the rice, the soups, or make the juice. A team that works together like a Swiss watch.

Customers and employees who return, employers who help and do everything humanly possible to make them feel good is a recipe that few know how to carry out. It is the secret ingredient of La Rancha. I have seen a giant family with no blood ties, I have seen a mother give a proud kiss to her son. I have seen a happy little girl running in the restaurant, I have seen and heard laughter, I have seen the pride in so many people who live there that nothing surprises me. I have seen the solidarity of all, what I have seen; others also see it and that is why it is not a simple anniversary. It is a reminder of a journey that continues, of remembering also what others gave for its growth.

It is a tribute to those who are here, also to those who are not. And undoubtedly, to all those who are yet to come.

Happy anniversary to La Rancha!
