Back at it again, another Food Fight Friday!! Wait, hold up... I haven’t placed my vote for last week’s champion! If you are slackin’ Like me head right over HERE and place your vote before it is too late!!
Alright let’s get into the action and get my forkin’ Contender into the arena shall we?!
This week I bring to you a great tasting way to utilize all the left over BBQ Pulled Pork from the huge Pork shoulder I cooked up last week. Ya, you can keep making sandwiches topped with coleslaw but how about we turn that typical Pulled Pork Sandwich into a heavyweight breakfast sandwich. Complete with hash browns, eggs and cheese!!!
First, let’s get some homemade hash browns goin’ on. Clean the potatoes and. Use this cool peeler tool I got cut the potatoes into potato straws.
Top the pile of of potatoes with some butter, salt and pepper. Set the griddle on medium or about 250 F.
Now for the left over Pulled Pork, not much to do with it. Just throw it in a pan with a lid, add a little bit of water so it doesn’t dry out and warm it up.
Toss 2 of those fresh eggs into a pan with a little bacon grease. For some reason one yoke broke, and I didn’t even touch it. Oh well what do you do?? Add a little salt and pepper and cook them just how you like them.
Toast up whatever kind of bread you want to use, this time I made a few with English muffins and some with these hamburger style buns. Don’t you hate it when you toast your bread and it isn’t quite down so you push it down again. Then you forget about it and you pretty much burn your toast. Well that is exactly what I did. Oops.
Take your burnt bread and lay down a nice patty of those homemade hash browns.
