T'Bird follow up, part 2

This has been spatch cocked (Backbone removed) and seasoned, sat in the fridge uncovered overnight so it would dry (necessary for crisp browning skin)

Salted pure yellow Irish butter with Rosemary

I had to get kinky with this boyd

I couldn't help it, I had to taste the skin
The dressing was a little too much liquid, so it ia back in the oven for a bit

I must say, the dressing is better than mama's, because I have a few more options than she did, the bird had crispy skin, and it (and is) delicious.
I just took a plate over to one of my neighbors house.

So, IT IS DONE
Now to eat
