New year's day wouldn't have just gone by without me baking a cake and so I tried out a new recipe courtesy of cake recipes blog which usually pops up on this page.
Buttermilk pound cake.
Ingredients:
3 cups household flour
2 cups castor sugar
1 tsp baking powder
1/2 tsp baking soda
1tsp salt
200 gms margarine (I used stork bake)
6 eggs
1 tsp vanilla essence
1 tsp lemon juice
1 cup buttermilk (made using 1 cup milk and 1 tbsp white vinegar, got the idea just from this same group)
Method:
Cream the castor sugar together with the margarine on low speed till light and fluffy
Add the beaten eggs, vanilla essence and lemon juice and mix on medium speed
Sieve the flour, baking powder, baking soda and salt together
Now add the flour bit by bit to the cream whilst mixing using a wooden spoon
Then mix at high speed using a mixer
Pour in the buttermilk and continue mixing till you get a smooth light consistency
Pour your batter into a greased or sprayed pan and bake at 180 degrees for about 30 to 40 minutes till golden brown
When you check and cake tester comes out clean, then it's done so remove and put on cooling rack
Icing ingredients:
500gms icing sugar and an exta 1& 3/4 cups just to make sure you have enough cream to work on your cake considering the size because of 3 cups of flour
3 tbsps lemon juice
3 tsps cream of tartar
3 egg whites
Method:
Separate the egg whites from the yolk and beat at low speed till foamy
Add the cream of tartar and continue beating till the mixture becomes stiff
Then add the icing sugar bit by bit using a wooden spoon till it's all mixed then you can now use your mixer at medium speed
The cream is now ready for creaming the cake, separate it to add the colour of your choice. In this case I used red but to my surprise it turned out to be crimson pink, I had wanted scarlet red!
Spread the cream on the cake using a spatula and when it's all covered up, smoothen it by dipping the spatula in cold water from time to time
Decorate the cake as desired using a piping bag or decorating gun. I also added some silver balls then sprinkled some hundreds and thousands to add colour.
Cake is now ready and hmmm, it tastes so so good! Please note that I adjusted the ingredients and of course method of preparing it. It's good to explore and discover things on your own. Happy new year and happy baking in 2018 🙂!!
