When the weather is good we will normally braai on a sunday,
but although the sun is out to play today, the wind is horrendous!
So I was planning to do a roast of some sort,
until I got to the shop and spotted the lamb shanks...
Decision made! lol
LAMB SHANK SUNDAY!
Lamb shank whilst not the cheapest,
is definitely a meal that I would consider a comfort food.
It is also a wonderfully easy dish to prepare - and a slow cooker,
so frees you up to get on with other things!
These were pretty much the ingredients for today's shanks...
except for the tomatoes which I forgot to add to the photo. lol
Today I am cooking these shanks in on the stove top.
First off, give your shanks a rub of salt and pepper -
heat up a pot with some olive oil
and braise the shanks until they are golden all over
approx. 8 minutes.
once braised and looking like this...
you can remove them from the pot
and put them to one side...
Now you can throw in the onion, garlic and carrots
and braise those until golden looking...
approx. 10 minutes
Once that is done,
you can add about a litre of chicken stock
half a bottle of dry red wine,
the rosemary,
the lemon thyme,
the baby tomatoes
and last but not least,
return the shanks into the pot,
ensuring that they are submerged in the fluid.
Bring it to the boil and then reduce the heat,
medium to low.
Stick the lid on and leave it for approx. 2hrs
After 2 hours, you can remove the lid
and cook it for another 30 min.
Then remove the shanks and foil them.
Oh my Gaaaawd! Just look at that awesomeness!!!
The pot is now left with all the juicy deliciousness
which you can now bring to the boil
until it thickens somewhat.
You can use this later to serve over the shanks
with the carrots and tomatoes.
YUM!!!
Sadly, the way shank "should" be served is no longer an option for me...
please excuse me why I go and cry in the corner...lol
Yip... I no longer eat potato... least of all mash potato...
as this was my ULTIMATE weakness!
So tonight, I shall be serving it with a side of
cauli in white sauce and mint peas.
Just as good I tell you!
(I shall continue to try and convince myself! lol)
