Following the restaurant's pop-up success in November, Strut & Cluck will open a permanent spot in Shoreditch. This will be the first turkey specialty restaurant in London. The restaurant plans to be in spring next year.
Strut & Cluck is the idea of a husband and wife, Amir and Limor Chen. They want to change the reputation of turkey which is usually served once a year at Christmas.
According to British Turkey, Christmas does support the turkey industry for a year. There are 76% of families serving turkey on Christmas day. But Strut & Cluck wants to make sure that turkeys in England are not just for Christmas.
Therefore the restaurant does not serve turkey menu with gravy and stuffing like a typical Christmas dish. The restaurant will serve turkey cuisine inspired by the Eastern Mediterranean and home cooking from its owner's family.
Turkey meat is eliminated for 24 hours. Then the turkey is cooked with slow-cook method, so the texture is very soft. New turkeys are given spices and herbs before cooking them in a charcoal oven.
