Have you had a cup of coffee today? What type of coffee variety do you often drink? Usually, coffee lovers with milk (such as latte, capuccino, macchiato, or piccolo) prefer robusta coffee or houseblend coffee (a mixture of arabica and robusta). However, there are also those who like coffee that is brewed manually without adding sugar, we usually use Arabica coffee to get the authentic taste of manual brew.

Arabica coffee is one type of coffee variety and product that has a wide variety of flavors. In contrast to the robusta variety which is more flat and consistent in taste, Arabica coffee has a unique taste and has its own characteristics. Arabica coffee fans often ask, what affects the taste of this Arabica coffee? This is a difficult question to answer because there are many factors that affect the taste of coffee, such as the way the coffee is brewed, the post-harvest process, the planting location, the protective tree of the coffee, and the shelf life of the coffee. To determine the answer to that question, it may take a separate article.



Arabica Gayo Wine Coffee

This time, I don't want to talk about the specific taste of Arabica coffee. I want to review one of the coffees I got from my father. My father got roasted Arabica Gayo Wine Coffee from his friend and asked me to brew it too.

Wine Coffee is coffee that gets a special and special post-harvest process. There are several post-harvest processes for Arabica coffee, such as semi-wash, full-wash, natural, honey and wine. The wine process is considered the most difficult to do, it takes time, sacrifice and air-free storage.

To make wine coffee, the coffee beans are not peeled but are left with a cheery red skin and stored for a certain time (usually about 1-2 months) and then dried in the sun, then stored again. This complicated and time-consuming process makes it more than twice as expensive as normal Arabica coffee. I've tasted the wine coffee several times and never get the same taste every time I drink it, sometimes it tastes really good but some also have a strange taste.



Trying to Brew Coffee

When I opened this coffee packaging, this coffee gave off an extraordinary aroma. I have repeatedly enjoyed the aroma of this coffee because I was fascinated by the aroma. This wine coffee is processed and roasted by Sopic Coffee Roastery with a medium roasting level. You can see the color of this roasted bean coffee is more brown than the usual roasted bean coffee, which tends to have a black color.

I tried to brew this coffee with the manual brew V60 method. I use water and coffee in a ratio of 15 ml: 1 gram of coffee. I use an electric coffee grinder that is available at my parents' house, this grinder is quite strong and durable because I have been using it for several years.

I grind 40 grams of coffee beans, and later it will produce 600ml of coffee ready to drink. I tried a medium grind, and when it was ground the coffee aroma got stronger and everyone around me could feel the aroma.

When I did the initial process of brewing this coffee, the coffee grounds that I brewed produced a very beautiful bloom, this is also a sign that the coffee I use is still fresh and after I checked this coffee was roasted on January 15, 2022.

After about 3 minutes, I finished brewing the coffee. The wine coffee that I brew has a different color from coffee in general which tends to be dark in color, the result of my brewing coffee has a brown color like tea.

About Taste

Wine coffee has a sour taste, and a sweet, fresh fruit. The sour taste is probably the result of fermenting the sap of the coffee beans, and this is what gives coffee its taste like this. Honestly, I don't enjoy this coffee, for me it tastes too weird and makes my head spin. An hour after drinking this coffee, my head hurts a little. Unlike my father, he was very relaxed drinking this coffee and finished it all.

I've heard from my friends, that wine coffee is a coffee product that is popular only in Indonesia and is not much sought after for foreign markets because they think the taste of wine coffee is too over-fermented. My personal experience, I've tried several types of Arabica coffee from different regions in Indonesia, and maybe this coffee is not the coffee I would choose to drink.
