It's been about four weeks since we started our "apple syrup" project. Basically, we've been collecting under-ripe apples from our apple tree, either falling naturally or knocked down by the squirrels. We collected enough apples to fill a large jar.
We added equal weight in sugar to fill the jar.
After sitting in the dark basement for 28 days, the apples are beginning to liquefy and "melt" the sugar, forming a syrup at the bottom.
These still have a long way to go, probably a few more months. By the end of October, I expect the syrup to be ready.
Under-Ripe Apples for Sale?
I visited a grocery store that I've never been to before and I was surprised and happy to see them selling almost the exact same under-ripe apples that we've been collecting from our tree!
They don't call them "under-ripe" but "small". These are "small" green apples for $2.49/lb. I didn't realize that there was demand for the fruit that our little tree drops!
After filling the two jars, apples continue to fall. We've been collecting them and preserving them in the refrigerator in gallon bags.
We have enough apples that we could make apple sauce from them, which would be greatly enjoyed by our family.
Even our jar with more brown(ish) apples have still been producing a nice clear liquid syrup for us at the bottom of the jar. It's going to be great when these liquefy completely and we have some sweet/sour sauce for snow cones and ice-cream toppings! Maybe we can add carbonated water and make our own soda! Or even better, use the syrup with some yeast and create and old-fashioned carbonated soda!
