En todos estos meses he sido conciente que la seguridad al desarrollar un estilo propio en pastelería no nace de solo desearlo, nace de la profunda convicción en el proceso creativo.
Tratar de marcar la diferencia es la certeza de que, tras cientos de pruebas, el camino elegido es auténtico y fiel a una identidad.
Esta confianza se construye desde la misma idea, primero debemos soñar y luego tratar de materializar. Dominar las proporciones y recetas de un bizcocho, comprender la reacción del chocolate al atemperar o saber cómo influye la humedad en un merengue no es un acto de rigidez, sino de libertad.
Esa seguridad al crear un pastel permite arriesgar con fundamento, transformando un error en una oportunidad y una receta clásica en una firma personal.
El estilo no es una máscara impuesta, por ejemplo yo me dejo llevar por la inspiración, trato de imaginar como es el festejado, y así echo a volar la imaginación y lo materializo con los elementos técnicos que conozco. De eso va Cake Muse, pura inspiración pastelera.
Para crear un pastel debemos dejar fluir la expresión natural de la sensibilidad del pastelero, tal como sucede con otros oficios o artes. Tener seguridad implica respetar esa voz interior sin dejarse deslumbrar por tendencias efímeras.
Claro está que las referencias son válidas, pero crear lo que deseamos significa entender que la estética, el sabor y la textura deben dialogar en armonía, y que el resultado final, aunque imperfecto, tiene la coherencia de quien lo creó.
Sin embargo, la seguridad verdadera también reconoce la evolución, mis creaciones iniciales nada tienen que ver con las actuales, ocho meses han significado crecimiento y aprendizaje.

In all these months, I've become aware that the confidence to develop a personal style in pastry doesn't come from simply wishing for it—it comes from a deep conviction in the creative process.
Trying to make a difference is the certainty that, after hundreds of trials, the chosen path is authentic and true to an identity.
This confidence is built from the very idea itself. First, we must dream, and then try to materialize. Mastering the proportions and recipes of a sponge cake, understanding how chocolate reacts when tempered, or knowing how humidity affects a meringue is not an act of rigidity, but of freedom.
That sense of security when creating a cake allows you to take risks with a solid foundation, turning a mistake into an opportunity and a classic recipe into a personal signature.
Style is not an imposed mask. For example, I let myself be guided by inspiration; I try to imagine who the guest of honor is, and from there I let my imagination fly and bring it to life with the technical elements I know. That's what Cake Muse is all about—pure pastry inspiration.
