Vegan cabbage rolls with mushroom stuffing

Hello, and happy fungi Friday. This post is my contribution to the #fungiFriday community by ewkaw@ewkaw.
Last week I posted my mushroom recipe for stuffed mushrooms. There I made enough stuffing for two recipes but only posted a non-veg recipe for stuffed mushrooms. The link is here.

The day after, I made vegan cabbage rolls with that leftover stuffing, here is the short version of making these rolls.


First I steamed a few cabbage leaves for 5 minutes. and kept them aside.


Here are the Ingredients:
1.5 cup leftover cooked rice
1 cup leftover mushroom stuffing
7 steamed cabbage leaves
1/2 cup paprika, celery, and carrot minced mixture, leftover from the stuffed mushrooms


Mixed half part of the mushroom stuffing in the rice.


then added the paprika, celery, and carrot and mixed it.


Here is my rice mixture ready to put in 3 of the rolls.


Cutting away the thick part of the stem of the cabbage leaf makes them easier to roll.


Put sufficient stuffing in the cabbage leaf.


Folding cabbage a leaf carefully to make into a roll.


I made 3 rolls with this mixture.

Rolled


Altogether 7 rolls fit in my steamer.


I used stainless steel strainer to steam these rolls.


Set them in a steamer properly and covered cooked for around 5-6 minutes.


They are ready to eat and served with green hummus and red hummus,
