Hello, and greetings. today again some Indian version of flat bread called paratha. Mostly parathas are made with vegetable filling/stuffing. But today I made it with a very easy version. and with paratha potato chickpea masala.
Ingredients:
1cup cooked chickpeas
1 tbsp cashew
1/2 tsp turmeric
1/2 tsp chili powder
1 tsp salt or according to taste
1/2 tap sugar
1/2 tsp garam masala
1/2 tsp cumin powder
1/2 tsp coriander powder
1 tbsp oil
1 potato of around 200 grams
2 medium size tomatoes
10 sprigs coriander
Cut potato in small chunks
and tomatoes in slices
Ground tomatoes and cashews in a blender or mixer.
In an iron pan heat oil and add potatoes and stir them until get half cook.
Add all spices except sugar and garam masala in the potato and stir it.
Now tomato cashew paste goes in potatoes.
Stir the mixture thoroughly adding some water according to the consistency of the gravy. I added little water I wanted thick gravy.
After the potatoes are cooked add chickpeas.
Add chopped coriander and sugar and garam masala.
squeeze 2 tsp lemon juice into it and stir, cover, and cook for 2-3 minutes.
Almost it is ready but I wanted it a little drier so cooked it 3 minutes more on low heat.
Making pumpkin parathas with chana/chickpeas masala. this time we got locally grown pumpkin but it was not so sweet so I planned to use it in a savory recipe. we made some soup and these parathas
Ingredients:
1cup cooked pumpkin
2 cups multi-grain flour
1/2tsp cumin powder
1/2 tsp coriander powder
1/2 tsp salt
1 tbsp fresh chopped coriander
2 tbsp oil.
Mix all ingredients together saving 1 tbsp oil for cooking parathas.
Instead of using water make a dough by mixing pumpkin in the flour mixture.
Here is the dough ready.
Make balls from dough according to the desire size.
Make one by one round sheets from balls using a rolling pin.
Warm a skillet or pan and shift the round sheet in the pan for baking it.
when the paratha changes color flip it and brush a few drops of oil from the saved one.
Turn it one more time and cook it thoroughly.
Here pumpkin parathas are also ready to serve.
