Lawyer's wigs for dinner

We are getting very rainy and windy weather these days all over is wet and the sky is almost always cloudy. Some times sun comes out and we go out. This time also we were out the sun was shining but the wind was too heavy. Our town is located by the sea so there is more wind here than inland. but still, we went for a walk. during walking In the park from a long distance I noticed some white spots in the grass. My wonder kept me walking toward that place where I noticed those spots. When I got closer, I recognized they were lawyer's wigs or sometimes called shaggy manes. here in Norway we called matblekksopp Coprinus Comatus. I called my husband to confirm it Because he Knows more about the mushrooms here in Norway. we confirm it is edible and after some nice photos, we picked them for our dinner.

Now started part two to make dinner.
These lawyer's wigs are very fresh and young back home I weighed them, they were 260 grams. by size they look to be more but they are very light.
I brushed off the grass and some dart and cut them into slices
they melt very easily so i kept quite big pieces.
Ingredients:
2 tbsp parsley
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1.2 shallot onion
1/2 cup cashew nuts
Heat an iron pan and add oil. When the oil gets warm add shallot onion slices.
saut茅 the onion and add mushrooms. stir it well. add salt and pepper.
When mushrooms start cooking they release a lot of water. I collected that water for use in the rice. when the mushrooms are cooked add chopped parsley.
after adding some roasted cashews they are ready for eating. but it is not enough dinner so I made some fried vegetable rice from leftover rice.
2 tsp olive oil
1/2 tsp salt
1/2 tsp turmeric
1/2 red paprika sliced
1/2 cup chopped cabbage
1 small carrot
2 sticks of spring onion
1/2 green chili, 2 cloves of garlic 2 cm fresh ginger all chopped.
2 cup leftover cooked rice.
heat a pan, add oil, add one by one vegetable, and stir until get transparent and soft. add salt and turmeric to the rice.
Mix rice into cooked vegetables and the water from the cooked mushrooms.
our nice vegetable fried rice with mushroom stock is ready.
Mushroom fried and vegetable fried rice is a very tasty and easy dinner. I wish every day I could get some wild food to make dinner.
The next day we were driving to shop and we saw these mushrooms on the roadside they are the same ones but very old and close to a busy street. these mushrooms tend to concentrate the pollution in the ground so it is not a good idea to eat them unless they are growing in a clean natural environment.
I would like to say to @mipiano, here in our area mushrooms are everywhere- even in the shop they sell wild mushrooms.
