Hello, food lovers greetings today is the first time I made this recipe for @qurator hive top chef theme chicken neck. Normally I use the neck to make broth for chicken soup or other non-vegetarian recipes.
These are freshly slaughtered chicken necks I used to make this recipe.
Here in our place, we get freshly slaughtered chicken and we have a choice of how much we can buy. the body temperature of chickens is higher than ours so when we get the chopped meat it is eerily warm in the hand. usually, I buy a whole chicken but today in addition I asked for two necks to make this recipe.
Ingredients:
3 chicken necks
2 small onions
2 cm x2 pieces of ginger
2 whole garlic bulbs (cleaned and peeled)
3 sprigs of curry leaves
3 green chilies
1 tomato
7-8 sprigs of fresh coriander
a few mint leaves
spices:
5 cloves
1 cinnamon leaf
1 big black cardamom
2 cm cinnamon bark
1 tsp chili powder
1/2 tsp turmeric
1 tsp salt
3 tsp oil
Cut chicken necks into small pieces.
2 pinches of chili powder, 2 pinches of turmeric, 3 pinches of salt
sprinkled on the neck pieces.
Mixed it thoroughly to coat all pieces.
Kept aside
Cut onions in slices. Chilies cut in halves.
curry leaves are separated.
coriander finely chopped, tomato sliced
ginger made like julienne cut. mint leaves are washed
garlic is already peeled.
In a pan heated oil and added whole spices.
As soon as the spices started aromatic stirred in garlic, curry leaves, chilies, and ginger.
When garlic started changing color added onion slices. and stirred for 3-4 minutes until the onion is translucent.
Adding tomato slices.
Then chili powder, salt, and turmeric.
Stirred until some oil is released. and now mixed in the chicken neck pieces.
After stirring for a few minutes they (Neck pieces) are coated nicely in spices.
Added 2 cups of water so it should cook properly.
Added chopped coriander.
Woohoo!! The gas cylinder is empty. they are very heavy so my husband came and connected a new cylinder to the stove.

Covered pan and cooked until its done.
the chicken neck masala is ready. its looks very good but I am not sure my husband will eat it? I tried myself and shared some with our gardener. He was very happy with chicken neck and Naan.
for naan, I used wheat flour which we milled fresh at home.
adding salt sugar and yeast made dough. and kept aside for an hour.

Made small rounds and cooked in a frying pan.
If I am making naan without an oven I do like this putting them directly on the fire.
