Today I actually didn't feel like cooking at all, so what do you do in such a case? Look in the fridge what you still have, and what you can make with it, which is especially EASY. Casseroles often take longer, but they are super easy. You just throw all the ingredients together and let the oven do the work.
So I quickly decided it had to be a casserole. Yes, of course I could also have chosen to have something delivered, which is even easier, but also at least 3x as expensive.
Hmmm, I can do something with this. A look in the cellar taught me that there was also plenty of pasta in stock. Nice! I knew our meal for today! And it wouldn't take much effort for me.
You take a baking dish. Then you cut the bell pepper, you cut the cherry tomatoes in half, and you take the box of Ricotta cheese. Place the Ricotta in the middle of the oven dish, place the bell pepper and tomatoes around the Ricotta. Toss the spices you want to add, in my case chili pepper, over the peppers, tomatoes, and ricotta. Drizzle a little olive oil over it and put it in the oven at 200 degrees for about 20 minutes.
While this is in the oven, cook the pasta according to the package. I picked up whole-wheat penne pasta today because it happened to be still in the cellar. And pasta is pasta. If you're not too inspired for dinner, you shouldn't be too hard on yourself, right?
After the tomatoes, bell pepper and ricotta have been in the oven for about 20 minutes, it is time to take them out. To add the pasta, keep in mind that you get a decent oven dish. Once again, I hadn't paid attention, and therefore created extra dishes for myself. The not paying attention part is also good for the fact that I didn't take photos
After the pasta has been added, it's time to toss a bit. When you're happy with your tossing, it's time to add the last ingredient for now. And that, of course, is the grated cheese.
After that, the dish can go back into the oven for another 20 minutes and when that's done you have two last steps to wait before you're done. First you put on your plate what you want to eat, and second you garnish with the fresh arugula for some greenery. I had thrown a handful more of arugula on my pasta after I took the photo. LOL!
You have to get something healthy from somewhere and still stay within budget.
Once this is to your liking, it's time to take your plate to your dinner table and enjoy a simple, not too expensive, but very tasty easy pasta.
