Feliz inicio de semana chicos 👋🏾. Hoy quiero compartirles un plato que preparé para disfrutar en familia y lo mejor de todo, libre de gluten, por lo que es súper ligero tanto para el almuerzo, como la cena. Y si son amantes de los vegetales verdes y esa crocancia de los "gratinados" (como yo), estoy segura de que les va a gustar mucho 🥰.

Para prepararlo, vamos a empezar por los ingredientes para:

El relleno:
600 ml de agua
1 brócoli mediano 🥦
2 dientes de ajo
1/2 cebolla 🧅
2 cucharadas de aceite de soja

La bechamel:
200 ml de leche completa 🥛
1 cucharada de aceite de soja
1 cucharada y 1/2 de margarina 🧈
2 cucharadas de maicena
1 cucharadita de sal 🧂
1 cucharadita de pimienta
1 cucharadita de nuez moscada

El gratinado:
6 rebanadas de queso mozzarella

Una vez que tenemos todo, empezamos lavando y picando el brócoli para cocinarlo al vapor en una olla con 600 ml de agua, hirviendo por aproximadamente 10 minutos.

Mientras se cocina, nos ponemos a picar los ajíes y rallamos el ajo para así llevarlos a una sartén previamente calentada por 2 minutos con aceite de soja (por 2 minutos más y cuidando que el ajo no se nos queme), para luego reservarlo en la misma sartén.

Una vez que esté listo nuestro brócoli, los sacamos de la olla y pasamos a la sartén donde tenemos el aliño (previamente calentado por 1 minuto) y lo terminamos de cocinar por 3 minutos de forma envolvente para así reservarlo (cuidando siempre de que el aliño lo cubra todo).

Ahora nos ponemos a preparar la parte "cremosa" de nuestro gratinado... La bechamel. Así que agregamos la margarina con el aceite de soja para dejarlo derretir y cocinar por aproximadamente 2 minutos.

Luego la cebolla, la pimienta y la mezclamos con la sal por 2 minutos más, para así verter la leche, la maicena y la nuez moscada batiendo todo por 12 minutos o hasta que tenga el espesor que deseemos para retirarla del fuego (no tan firme para que quede muy espesa).

Ya solo nos queda preparar nuestro molde con margarina (yo para esta receta utilicé uno de barro, sin embargo, también puedes utilizar uno antiadherente).

Y mientras vertimos la mezcla de bechamel, nos aseguramos que cada capa sea un poco gruesa (para que así podamos preparar nuestro plato de tres niveles): una de salsa bechamel, otra con nuestro brócoli, luego más salsa bechamel, para terminar con una capa “especial”)…

Sin olvidarnos de ese toque final para que quede deliciosamente crocante y dorado... el "queso mozzarella" (una vez listo, solo nos queda llevarlo a nuestro horno previamente calentado por 15 minutos o hasta que tenga el dorado que más nos guste).

Es una preparación muy sencilla de hacer y nutritiva, sobre todo para momentos en los que buscamos hacer algo crocante pero rápido de preparar... Estoy segura de que les va a gustar el poder disfrutarlo este fin de semana. 😊

Happy start to the week, guys 👋🏾. Today I want to share a dish I made to enjoy with my family — and best of all, it’s gluten-free, so it’s super light, perfect for either lunch or dinner. And if you’re a fan of green veggies and that crispy, cheesy “gratin” finish (like I am), I’m sure you’ll really enjoy this.

To make it, let’s start with the ingredients for:

The filling:
•600 ml of water
•1 medium broccoli 🥦
•2 garlic cloves
•1/2 onion 🧅
•2 tablespoons of soybean oil

The béchamel sauce:
•200 ml of whole milk 🥛
•1 tablespoon of soybean oil
•1 1/2 tablespoons of margarine 🧈
•2 tablespoons of cornstarch
•1 teaspoon of salt 🧂
•1 teaspoon of pepper
•1 teaspoon of nutmeg

The topping:
•6 slices of mozzarella cheese

Once we have everything ready, we start by washing and chopping the broccoli, then steaming it in a pot with 600 ml of boiling water for about 10 minutes.

While that cooks, chop the peppers and grate the garlic. Sauté them in a pan that’s been preheated with soybean oil for 2 minutes (cook for 2 more minutes, making sure not to burn the garlic), then set them aside in the same pan.

Once the broccoli is done, remove it from the pot and transfer it to the pan with the sautéed aromatics (which you’ve reheated for 1 minute), and cook it for another 3 minutes, stirring gently so everything is well coated. Set aside.

Now we’ll prepare the creamy part of our gratin... the béchamel sauce. Start by melting the margarine with the soybean oil, cooking it for about 2 minutes.

Then add the onion and pepper, and mix in the salt, cooking for 2 more minutes. Next, pour in the milk, add the cornstarch and nutmeg, and whisk everything for about 12 minutes, or until it reaches your desired thickness (not too thick — you don’t want it to turn too firm).

All that’s left is to prepare your baking dish with some margarine (I used a clay one for this recipe, but you can also use a non-stick one).

As you pour in the béchamel mixture, make sure each layer is a bit thick so we can build a three-layered dish: one layer of béchamel sauce, another with the broccoli, then more béchamel sauce, and finally, a “special” top layer…

And don’t forget that final touch to make it deliciously crispy and golden — the mozzarella cheese! Once it’s ready, just pop it into your preheated oven for about 15 minutes or until it’s as golden as you like it.
