At the moment I am in the office pantry .After working on my night shift job I directly heed to the sleeping lounge to get my much needed sleep before I heed my way home.
I am not a vegetarian by definition but I love vegetables. So today I am letting you in to my day to day menu.
Today's serving will be "pinakbet" or "pakbet" for short. It's an array of vegetable sauted in oil with few slices of meat either pork or chicken. The vegetables including okra, squash, bitter guard and eggplant among others. I include a picture
Why I love pakbet.Its easy to cook. What I do after washing and cutting vegetables I saute them in pig fat or chicken fat. Then I put the bagoong hipon" or fermented shrimp paste then I put the assorted vegetable. Let it simmer then viola!
