Ingredients:

- 1 Nonstick cooking spray

- Fresh cherries, as needed (or canned black cherries in syrup, if out of season)

- 5 large eggs

- 1 cup of half-and-half (or a mix of milk and cream)

- 1 cup of heavy cream

- 1 cup of sugar

- 1 tablespoon of vanilla extract

- 3/4 cup of all-purpose flour

- Powdered sugar for garnish (optional)

- Equipment needed: Blender, pie mold or dish, lasagna pan.

Instructions:

Prep Time: 20 minutes

Cook Time: 40-45 minutes

Total Time: About 1 hour to 1 hour and 5 minutes

Servings: 8-10

1. Preheat your oven to 350°F (175°C).

2. Generously coat your pie mold or dish with nonstick spray.

3. Place the prepared mold in a larger lasagna pan to create a bain-marie setup.

4. Pit your fresh cherries if you're using them, and spread them evenly across the bottom of the pie mold. Make sure to fill it up, but leave enough room for the custard.

5. In a blender, combine the eggs, half-and-half, heavy cream, sugar, vanilla extract, and flour. Blend until the mixture is smooth and well incorporated.

6. Pour the custard mixture over the cherries in the mold, being careful not to overfill.

7. Carefully fill the lasagna pan with hot water to about halfway up the side of the pie mold to create the bain-marie.

8. Place the bain-marie in the oven and bake for about 40-45 minutes, or until the Clafouti is set and golden brown on top.

9. Allow the Clafouti to cool slightly before dusting with powdered sugar if desired.

10. Serve warm or at room temperature.
