There is no doubt - I make the worlds best potato salad. Yes, I haven't tried every potato salad around the world and no, the world hasn't tasted mine...But it sounds good and I'm sticking to it. Besides, you can't have much of an opinion as you haven't tried it! I know you want to taste it though and I don't blame you.

Anyway, you'll just have to trust me on this...I make the worlds best potato salad.

Merry potato salad day

Today is the 25th of December which marks a special occasion...Potato salad day. That's right, it's the day on which I make it.

I don't often make potato salad because...Well, carbohydrates you see. I'm fifty one years of age and whilst I've always maintained myself in good shape, it gets harder by the year. My issue with potato salad is that I have no resistance to it...Like, I can't stop eating it. And so I limit it to today, the most special of days around the world - Potato salad day.

Below is some of my potato salad preparation.

I actually know the worlds best potato peeler however she had a previous engagement and so I was forced to peel my own potatoes. It's ok though, I'm the seventh-best potato peeler in the world and so was able to handle the task admirably. I'll admit though, I wouldn't have minded the worlds best around to help, I really, really like her style.

I'm not going to divulge the secret to my worlds-best potato salad however you can see some ingredients and I'll mention one secret.

Usually when cooking things one cuts the ingredients up the same size so they cook evenly. I don't do this with my potato salad. I cut about one third of the potatoes smaller so they cook a little more than the larger pieces. This way, on mixing it all together there is some texture to the final product. It's not crunchy of course, but the larger pieces have a pleasing bite to them whilst the smaller and softer ones sort of mash up making the potato salad scrummy! (Scrumptious I mean.)

Some of the other stuff

Potato salad day isn't just about potato salad though; other elements are required and whilst I'm not going to bore you with pictures of everything I'll share a few.

The day always starts strong with breakfast. Now I'd traditionally make my world famous smashed avocado with radish and mint on rye bread topped with poached eggs and crumbled feta, drizzled with lemon...I've posted about it before - But not today. I went with the humble croissant...But with a twist.

Ok, not so much a twist...Maybe I should say taste!

These days most store-bought tomatoes have zero taste and, after putting up with it for too long, I decided to grow my own. They have been ripening up nicely and over the last few weeks I've been eating them...Yes, scrummy.

So, in my croissants this morning I used my own tomatoes added to the ham and cheese. My tomatoes are juicy, flavoursome and, well they're mine and that makes all the difference. I grew them!

Anyway, I added in a coffee and orange juice, something I don't have very much because there's far too much fructose in there for a diabetic like me, but hey...It's potato salad day and that means I can let my hair down a little...And hopefully not lapse into a coma.

After breakfast I did a video chat with my four year old nephew who lives 4,000km away and had we some fun. I miss him so much and we're sort of like a couple peas in the pod, both knuckleheads, so get along really well. I hope to see him in April 2022 if the pandemic permits. His mum and dad were there also so we did the obligatory Merry potato salad day greetings and all. I spoke to my sister in Sydney also plus a pile of other people who kept calling me because it's potato salad day, and wanted to wish me well.

Back to the food

This year I grabbed some lobster tails at a really good price - It has something to do with the Chinese putting a trade embargo on many Australian products to bleed us into submission economically prior to the conventional war starting. Anyway, it means Australian's can now afford to buy their own produce occasionally and I lashed out and grabbed some. Potato salad day is a special occasion after all.

Above you can see the tails which I had to split down the middle and open up a little. That's the poor little unfortunate buggers in the pan with the garlic butter then the finished product at top left. They were tasty as you might imagine but I'll be honest, I don't think they're worth the money.

Added to this was a small turkey-roll which is turkey with no bones in it and wrapped up tight in foil. Once baked and the foil is removed one has a solid, and very tasty, bundle of turkey. Below you see the oven process, cooked and foil removed then finished off after browning.

To this I added a green salad, with my own cucumbers, lettuce and tomatoes in there, a coleslaw with ranch dressing and a few slices of toasted olive sourdough loaf drizzled with olive oil served with a small bowl of olives also.

Lunch is over now and I'm feeling like a snooze which, if I'm totally honest with you, is definitely going to happen because that's what potato salad day is all about for me...Relaxing. Oh hang on...There's also some gifts on potato salad day. Sorry, I forgot to say.

This year I got a hammock, one of those free-standing portable ones that can go anywhere and get set up. I was pretty pleased as I'll be able to take it camping and snooze away the late afternoon's in it after a full day of hiking adventures. I also bought myself, and wrapped up in gift wrapping, a UHF CB radio for the Big Dog, my four wheel drive. I'll do some photos and a post on that separately. Come on, one must spoil oneself on potato salad day right? At least I wrapped up up and put it under the tree!

So, it's time for my snooze and then I might watch a movie, maybe Avatar or Peral Harbor, one of my favourite movies ever. We'll see...Maybe I'll just snooze for a really long time.
