Happy weekend hivers!
It’s been a while since I’ve “dashed” an item out. This weekend I made some caribbean-style pumpkin soup. Jamaicans often have soup for dinner on a Saturday. The soups are usually filling and usually contain a good variety of items. My family had it for dinner on Saturday and we had the remainder of it for breakfast this morning (Sunday). Ours was fairly light but there’s something special about having it the day after it’s made. All the seasonings and flavors are fully combined, producing a richer taste and dining experience.
Gathering Ingredients
I started out by gathering my ingredients and putting them on a tray. Thought I had all I needed but later remembered that I had sweet corn in the refrigerator. I almost missed it as it was behind some bottles.
So, on the tray, there are, carrots, potatoes and chops of ham (leftover from Christmas). There is also a piece of pumpkin, some flour for making dumplings, coconut milk powder,cock flavored soup mix, onion and garlic (for taste). I also added salt for taste, though it’s not on the tray.
Procedure
1. Wash, peel and dice the carrots and potatoes. Peel and cut the pumpkin in bigger pieces for crushing after it’s boiled.
2. To a pot of boiling water, add the pumpkin and carrot. Remove the pumpkin from the pot after it’s boiled. Crush it and re-add it to the pot.
3. Make a mixture of flour, salt and water to make dumplings. Make round ones and or longitudinal ones by rolling pieces of the dough in the palm of your hands.
4. Add to the pot, the potatoes, corn, ham, cock flavored noodles and salt to taste.
5. Grate the garlic and onion (to taste) and add it to the pot as well.
6. Using warm water, make a mixture of coconut milk powder. Strain to avoid possible lumps and add it to the pot.
7. Stir everything in making sure not to overcook the vegetables.
8. Serve and enjoy.
Now, we don’t necessarily have soup on Saturdays but this pot of soup brought back lots of memories of life in our island home-Jamaica.🇯🇲 This year, it celebrates 60 years of independence. Here, the Island Kings, a singing group,do their version of the national anthem, Jamaica, Land We Love:
