It is no surprise that I have a bit of a sweet tooth. Ok, maybe more than a bit. I used to be able to pack away a half of a pecan pie and a big glass of milk. I don't roll like that anymore, but I do love a nice treat.
For the past three and a half years I have eaten 100% plant based. The upside is that it limits the stuff I can buy off the shelf and shovel in my mouth. The downside is that most of my sweets take time to make.
Stacie D has made some amazing creations over the years, and more recently she has perfected her chocolate cake recipe.
On Monday we celebrated Stacie D's birthday with some chocolate cupcakes. On Tuesday... My oldest son decided he wanted to try his hand at making her chocolate cake. Shoot, if you're going to have a treat have it two days in a row!
So @thegreatdayne said it was going to be a layered cake with whipped frosting. The funny part was that he made one cake layer out of the same amount of batter that Stacie would use for three layers haha.
He made two of those thick layers (which would be six of the normal layers) and then put frosting in between and on top.
We couldn't decide on what kind of frosting, so we got chocolate and vanilla. He thought it would be fun to do it half and half. So the middle layer was half vanilla and half chocolate. The outside was just the opposite.
It was amazing, and fun!
There is some extra frosting? Don't mind if I have an extra scoop!
