This recipe serves ~3 people, and takes ~1 hour to make (including the time to prepare the potatoes).
Cut 2 raw potatoes into small chunks. Put the small chunks into a pot. Fill the pot with enough water to cover the potato chunks (~2 inches above potato chunks). Cook for 30 minutes on medium heat, or until a fork can easily pierce through to the middle of the potatoes.
Let the potatoes cool off in a large bowl for ~15 minutes.
Next, add carrots, corn, peas, green beans, garlic, ginger, turmeric, cumin, black pepper, salt, 1 egg to the large bowl with the potatoes. Mash all of the ingredients together with your hands, or with a fork.
With your hands, shape the mashed ingredients into veggie cakes ~3 inches wide and ~1 inch thick.
Dip each veggie cake into a whisked egg, on a plate or in a bowl, then dip each veggie cake into flour, on another plate or bowl. Make sure to cover each veggie cake thoroughly with egg and flour.
Coat the frypan with oil, then heat it for ~1/2 a minute, on medium heat.
Fry each side of the veggie cakes for ~6 minutes, or until they have a golden crisp on both sides.
Optionally, add diced tomatoes, fresh cilantro, and drizzle lemon juice and oil over the top, or serve a plate of fixings to your liking.
This recipe for veggie cakes can easily be transformed into a recipe for fish cakes by altering steps.
After Step 1 and before Step 2, while the potatoes are cooking, fill an empty pot with water. Place a piece of raw, boneless fish into the water. Cook on medium heat until the fish flakes easily with a fork (~10 minutes). Let the potatoes and the fish cool off in a large bowl for ~15 minutes. The vegetables added in Step 3 then become optional. There are no other changes needed for the remainder of the steps.
