Monday's wrap-up was a little delayed because our neighbour dropped by to discuss a joint order of seeds for autumn/winter planting. Lockdown has meant that we haven't caught up. Properly. For probably over a year.
Over a glass of wine on the stoep after I had made myself focus on the flour tortilla dough for supper. I did almost screw up: I lost count of the cups of flour and by the time I realised, I had already added the salt. No going back.
I didn't get the ratio of oil quite right, but they were entirely edible and not too crisp. Next time (there probably will be), more oil.
I had thought of doing something one of my "famous made-up" dishes, but because the evening had pleasantly fled, it had to be a quick bean chilli for a meat free Monday. Simmering on the hob as I rolled out the wraps.
I do admit that this is a favourite meal (it's long - like nearly 20 years - been part of the regular repertoire) and I love loading my tortilla in an Irish way: cheese then warm chilli then the lettuce and fresh coriander. I like the melty cheese... The Husband follows suit, doing his own because he adds chilli to the chilli...
Lose the cheese or use a plant-based substitute and this becomes a vegan meal.
