This is how Wednesday evening began: a fire. The first in days. The wind is howling and it's cold. It's a South Easter. The summer wind. Springtime? Ha!!
It's thyme. Its flavour is best when the flowers are buds or new. And mushrooms love it. Mushrooms in food are often not pretty.
Especially in pasta. This combination of onion, garlic and mushrooms, slowly cooked to bring out the flavours, makes up for it.
All enhanced with fresh thyme from the garden.
The evening ended abruptly when the lights went out. The entire village was plunged into darkness. The retreat to bed was by candlelight and solar jar. One cold, p-d off blact cat.
Until next time, be well
