There are probably some trade secrets on the board behind me but it was the best place for a selfie, girl’s gotta do what a girl’s gotta do.
After working so very hard, between taking selfies, it was time for homemade pizza, it has been quite a few weeks since the last time. This was a trial on how well the dough works when it’s been freezed after two days in the fridge, and then taken out a day before baking. I shaped the dough into flattened balls, froze on a tray for a few hours, then wrapped in cling film and an additional plastic bag, it’s essential to not get any freezer burns.
The dough ended up being a dream to work with, the pizza base basically made itself with very little effort, the only thing was that it didn’t rise like a fresh dough. I like my pizza edges quite puffy so I think I will try putting more yeast than I normally would because I think the freezer took some of the power away.
I usually bake my pizzas on day 3 after making the dough so it would be great to have readymade dough in the freezer that only needs 24 hours before go-time. 10/10 do recommend.
