Ingredients

🍄 1 tray of mushrooms, sliced (8 oz)
🧅 1/2 medium onion, sliced
🌿 Spinach, as much as you want
🥚 5 eggs
🧀 1 cup of your favorite cheese
🥛 1/4 cup of heavy cream
🧂 1/2 teaspoon of salt
🧂 1/2 teaspoon of black pepper
🧄 1/2 teaspoon of garlic powder
🌶️ 1/8 teaspoon of chili flakes (or to taste)
🧈 2 tablespoons of butter


Instructions

1- Prepare the Vegetables:

  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add the sliced onion and mushrooms to the skillet. Sauté them for a couple of minutes until the onions become translucent and the mushrooms soften.

2- Season the Vegetables:

  • Season the sautéed mushrooms and onion with salt, black pepper, garlic powder, and chili flakes. Stir well to combine.
  • Add spinach to the skillet; the amount is up to your preference. Allow it to cook down, stirring occasionally.

3- Prepare the Egg Mixture:

  • In a separate bowl, crack the 5 eggs.
  • Add 1/4 cup of heavy cream and 1 cup of your favorite cheese to the eggs.
  • Sprinkle a little salt and pepper into the mixture, then whisk everything together until well combined.

4- Combine and Cook:

  • Pour the egg mixture over the sautéed vegetables in the skillet.
  • Reduce the heat to low, cover the skillet with a lid, and let it cook for about 5 to 8 minutes, or until the eggs are set.
