Rice crispy cakes are one of my favourites. Healthy chocolate rice crispy cakes? Uhm, yes please.

The sad thing about all the cakes, biscuits and other sugar filled products is that they have pretty much no nutritional value at all. When I make desserts, I want them to be utterly delicious but completely full of things that are amazing for your health rather than making you feel guilty.

I literally cannot tell you how amazing these are. They have not got one bad ingredient and if you gave them to your unhealthy friends, they would not know they are healthy – seriously.

The ‘chocolate’ in this recipe is in fact raw cacao. I have talked about this in my posts before, so I’m not going to ramble on here again. It is so incredible rich and divine and you will be licking the chocolate sauce mixture out of the pan with a spoon.

Now I just want to address the elephant in the room. You’re probably shouting at your screen ‘Rice crispies are processed and full of sugar!’ and yes you’re right. That’s why I am using organic whole grain brown rice puffs which are completely natural and sugar-free as well as being so much more amazing!

In terms of sweetness, I have mainly used rice malt syrup. The reason for this is because it is actually a complex carbohydrate which means that our bodies have to work to break it down which prevents it messing about with our blood sugar levels. It also contains no fructose. Fructose is a sugar that doesn’t send any messages to our brain to tell us we are full up, which consequently makes us eat way more than we should!

Finally, coconut oil. My favourite coconut oil is the pure and extra virgin one that you get from health food stores. It has the most incredible fresh coconut flavour and is amazing added to desserts. However I know a lot of people don’t like the taste of coconut, so another option is coconut oil that has been refined, which you can buy from supermarkets. There is nothing wrong with this coconut oil, it has only been refined by mechanical means and the goodness is all kept in, but the flavour has been removed. This is perfect for those people who don’t like the taste! Obviously I prefer the pure, unrefined option but I just thought I would let you know just in case of coconut-haters. As you probably know, coconut oil is amazing for you containing mainly short and medium chain fatty acids, and it is even shown to help prevent diseases like dementia!

So, healthy chocolate rice crispy cakes that keep you full and help prevent against dementia…are you ready?

Healthy Rice Crispy Cakes Recipe

Ingredients

2 cups brown rice puffs
4 tbsp extra virgin coconut oil
⅓ cup raw cacao
3 tbsp pure honey
⅓ cup rice malt syrup
1½ tbsp crunchy peanut butter

Instructions

Place all of the ingredients instead of the rice puffs in a large saucepan and heat slowly, stirring until everything is melted and combined.

Remove the saucepan from the heat and stir in the rice puffs until they are all covered.

Transfer the mixture equally between cupcake cases.

Place all of the chocolate crispy cakes in to the fridge for approximately an hour before eating.

Store in the fridge.
