Update on my attempt to grow food inside this winter

It's 24 degrees below zero (freezing) outside, but 24 above zero in my living room, where I'm doing my best to grow food. These spinach plants aren't coming up very fast, but they look tasty!

I don't have strong lighting, or great soil, but they're doing okay so far. I have 18 now, after thinning out a few.

I'm excited to see the first true leaves growing:

If all goes well, in a couple weeks I'll be able to make my first harvest.

It's good to know I'm able to produce this iron-rich crop at any point in the year. Now, the question is what kind of yield I'll manage to get!
