I am a lover of all things corn. I am talking popcorn to corn-on-the-cob. This is one of my favorite sides I just recently had at Rosalita's Roadside Cantina in Brick, New Jersey. If you would like to try this, get the napkins ready. I am referring to Mexican Street Corn, shown in the picture above on the cob.
The typical Mexican Street Corn is covered in a mayo and sour cream mix and dusted with Chili Powder. In addition, it is also covered in Cotija Cheese, which is named after Cotija, Michoacán. Michoacán is a state located in western Mexico. This tasty dish is usually finished off with lime juice. If this item is on the menu, I can usually guarantee you that I am ordering it.
