Hay platos que quedan en la memoria y que algún detalle hace que los evoquemos llevándonos a las experiencias de aquel lejano momento. Eso me pasó esta semana en el supermercado.

Cuando llegué al área de vegetales, frutas y afines me deslumbraron los tomates, por su frescura y tamaño, tenía años que no veía unos tomates de gran tamaño hermosos y maduros. Enseguida llegó a mi mente unos tomates rellenos que mi abuela acostumbraba hacer.

En aquel tiempo era común encontrar el tomate manzano que es redondo, carnoso y grande, esto eran de la variedad que llamamos perita que son más alargados pero, como digo, tenían un tamaño ideal para rellenarlos, aparte de un excelente precio, Así que me dije: —Están espectaculares para hacerlos rellenos y en seguida busque de comprar todos los ingredientes que recordaba para prepararlos.

El tomate es una fruta de gran contenido nutricional rico en minerales como el hierro, calcio, magnesio, sodio, potasio, entre otros, también aporta a nuestro organismo vitamina C, E, B y A siendo recomendado su consumo con alimento antioxidante, regenerador de células y favorecedor de la circulación sanguínea, además su gran contenido de fibra ayuda a los procesos intestinales.

El relleno de éste plato es a base de atún uno de los pescados más recomendados por su alto contenido de Omega 3 que favorece el funcionamiento cardiaco y es un complemento necesario para la protección de la piel.

Adicional a ello, como veremos a continuación, lleva otros vegetales en su preparación haciendo de este plato una comida completa, nutritiva, exquisita y fácil de preparar. Sin más preámbulos vamos con la receta y su paso a paso.

Ingredientes

6 tomates grandes y firmes
400 gr de atún
1 cebolla mediana
2 tallos de cebollín
½ pepino
4 ramas de cilantro
3 hojas de laurel
Hojas de celery
2 cucharadas de aceite
2 Cucharadas de jugo de limón
2 cucharadas de mayonesa
1 cucharadita de ajo triturado (6 dientes de ajo pequeño)
1 cucharadita de mostaza
1 cucharada de albahaca seca
Sal y pimienta al gusto

Procedimiento

1.- Lava y quita la piel al trozo de atún.

2.- En una olla ponemos a cocer el atún en poca agua con sal, hojas de celery y laurel, dejando a fuego lento hasta que el atún esté suave y la pieza no sangre.

3.- Cuando este listo dejamos enfriar, le quitamos las partes oscuras, desmechamos y reservamos.

4.- Pica en cuadros pequeños la cebolla, el cebollín, el cilantro y el pepino. Reserva

Nota: Retira todas las semillas al pepino, antes de picar.

5.- Corta la parte superior de los tomates, con un cuchillo punta fina corta por todo el borde central cuidando de no dañar el tomate, con una cucharilla retira la pulpa.

6.- Una vez vaciado los seis tomates procede a picar en trozos pequeños toda la pulpa

7.- En un bol incorpora los ingredientes

8.- Prepara la vinagreta: primero emulsiona el aceite, el limón y la sal, luego agrega la mayonesa, la mostaza, la albahaca, el cilantro y la pimienta. Mezcla muy bien todos los ingredientes, vierte la salsa a los ingredientes de la ensalada y sigue mezclando hasta que todo quede uniforme.

9.- Procede a rellenar cada tomate y adorna con hojitas de cilantro o de conseguir con hojas de albahaca fresca.

6 large and firm tomatoes
400 gr of tuna fish
1 medium onion
2 stalks of chives
½ cucumber
4 cilantro sprigs
3 bay leaves
Celery leaves
2 tablespoons of oil
2 tablespoons lemon juice
2 tablespoons mayonnaise
1 teaspoon crushed garlic (6 small garlic cloves)
1 teaspoon mustard
1 tablespoon dried basil
Salt and pepper to taste

Procedure

1.- Wash and remove the skin from the tuna.

2.- In a pot put the tuna to cook in a little water with salt, celery leaves and bay leaves, leaving it to simmer until the tuna is soft and the piece does not bleed.

3.- When it is ready, let it cool, remove the dark parts, discard and reserve.

4.- Chop the onion, scallion, cilantro and cucumber into small squares. Reserve

Note: Remove all the seeds from the cucumber before chopping.

5.- Cut the top of the tomatoes, with a fine tip knife cut all around the central edge taking care not to damage the tomato, with a spoon remove the pulp.

6.- Once the six tomatoes have been emptied, proceed to chop all the pulp into small pieces.

8.- Prepare the vinaigrette: first emulsify the oil, lemon and salt, then add the mayonnaise, mustard, basil, coriander and pepper. Mix all the ingredients very well, pour the sauce to the salad ingredients and continue mixing until everything is uniform.
