If you're a westerner (American, European, Canadian, etc), you need to at least find and try this dish once in your life when you visit a Chinese restaurant/country.
It generally goes something by the name of Mala Sze Chuan Hotpot. It's a pretty intense spicy dish that hits you hard at the initial taste and has a growing spicy build-up overtime on top of that. After a serving of this, you'll feel like you're pregnant with a fire baby. But it's honestly a really wholesome meal, and while spicy, it's not at an overkill level where your stomach lining gets burned through. Pro-tip when consuming this for the first time is to scoop the soup from the bottom and try to avoid the oil which is what really kills you if you can't handle spicy food.
This is the sliced fish version, there's a poached beef which is generally the choice of meat to go with the soup since it absorbs and soaks up all that fiery goodness better than fish.
