There's a place in Korea near I live that claims to have discovered the perfect recipe for cooking sirloin. They only treat the best of the best of hanwoo sirloin (A korean breed of small cattle, they taste amazing!) Their secret explained by the waittress, is to cook beef at a temperature of 270C on a stoneware that would sear the meat and capture the juice while maximizing the Maillard effect, whatever that is... lol
This is their secret stone grill. You can see that its quite worn off.
Here comes the meat! The meat stays on the grill for a very short period of time. I would say about 2 mins.. which is really short compared to cooking a steak. Even a medium rare cook would take much longer.
After a quick sear, protect the beef from overcooking with a layer of onions underneath. The beef is nice and pink inside and brown and crispy outside.
