Healthy vegan meal ideas using local foods

I made my own bread for the first time in forever and now I'm hooked since it's a lot cheaper and tastier than what I can find in the shops.

I prefer to choose foods that are grown locally or as local as possible. This means I eat seasonally which in turn is way healthier for the body and better for the environment.

At the moment I dont want to over complicate my meals and I keep the preping and ingredients very simple, particularly since I am travelling I cant stock up and so it keeps everything to the minimum, so you could say these are minimalist meal ideas.

I've been buying some sweet potatoes the first in the season, I will use only one potatoe in a sauce with sprouted lentils, peppers, tomatoes and some herbs. The potatoes adds a sweetness and thickness to the sauce.

I also enjoy making a crunchy slaw with purple cabbage and carrots and whatever veg I have lying around. Since I dont have access to a blender or any fancy machines atm, I make a nice creamy sauce with tahini and water, that's it. You could add a bit of sumac or salt to taste.

Whole grain pasta is one of my go to dishes when I'm feeling the need for some easy comfort food, and the left overs are great for salads.
