This week on plantbased challenge I have chosen the ingredient onion. I guess the title speaks for itself.

I couldn't live without onion. We recently made fun of a customer at work, who didn't want red onions in her food. The server went back and forth to the kitchen. I asked if it was an allergy. She went back and said she just doesn't want to see red onion in her food. I told the server that there's red onion in everything. We gave her something where the onion was not visible.
I know it's not nice to make fun of people but when our rhythm is broken in the kitchen with fussy eaters, it brings out the worst in us. Sorry eh!

Enough gripe and on with my onion dip.

Start by caramelizing 5 or 6 onions and a few cloves of garlic. Use a little splash of vinegar or lemon juice to deglaze the pan. After browning set aside to cool.

I used a cashew cream for the base but silken tofu or vegan sour cream would be good too. I can't find vegan sour cream around my neighborhood.

After soaking cashews for a few hours or overnight, blend until smooth with cider vinegar, lemon juice, salt, and nutritional yeast. Add some of the liquid bit by bit to cream the cashews. My tools are not good so I did small amounts at a time.

I added extra chopped green onion, pepper and onion powder to the mix.

I knew it wouldn't be complete without some fried onions on top.

Onion dip
5 or 6 yellow or white onions
3 or 4 cloves garlic
4 cups soaked cashews
1/4 cup cider vinegar
Juice of a lemon
Salt and pepper
1 stem of green onion chopped
2 tablespoons nutritional yeast

This is such a simple way to make a tasty dip that would please anyone even if they love dairy and animal products. If they hate onion, it would not fly.

I found some multigrain crackers to go with it. They even had a vegan symbol on it which surprised me.

I needed to get some raw veggies in me, so that was a must on this platter.

Back in the day if we wanted to make onion dip, we would add a package of onion soup mix to a container of sour cream and there it was. So even though this was a simple dip to make, it was a little more work than it was in the past, and dare I say, much tastier.
