Wild food forage

Today I'm going to introduce you to a spring time favorite forage of mine. Saw Brier! Aka Bull brier, cat brier That's right I said Brier! These tender spring shoots are really tasty, the taste raw is reminiscent of a raw green bean. And they more closely resemble the taste of asparagus once cooked. The trick is to catch them in early spring while they are still soft and limber. just snap off the no more than about 12 inches from the end.. if it doesn't snap off easily it may be to old. It should snap a lot like a green bean. once its to old they are to hard and woody.

Here is a quick foraged lunch of Saw Brier and field mushroom stems.. Cooked them in a little butter and topped them with salt pepper and Parmesan cheese. Mmmm I love spring time. Get out in nature and enjoy what God has made for us!-Buzzard
